Ambrosia Recipe

Ambrosia is said to be the food of the Gods in mythology. We just think its the perfect addition to our Easter menu, and every BBQ through out the summer.

In Greek mythology, ambrosia is the food or drink of the gods giving them longevity and immortality.  Today, ambrosia is used as an noun, describing something that is especially delicious to the sense of taste and smell.  It is also a dessert salad, which also happens to be incredibly light and delicious.

Many of the ambrosia recipes that I have seen call for either Cool Whip or whipped cream.  I don’t care for the added sweetness that they bring to the party, so my ambrosia has a surprise ingredient – sour cream!  The sour cream mingles with the natural sugars from the fruits, as well as the sweetness from the marshmallows to create a perfectly delicious dessert that isn’t overwhelmingly sweet.

Since we can a lot of fruits at home, we use 1 pint each of home canned pineapple and clementine segments to make our ambrosia, but if you can use store bought pineapple chunks and canned mandarins and the recipe will come out just as delicious.

Ambrosia

1 pint home canned pineapple (20oz can)
1 pint home canned clementine segments (12oz can)
16oz jar of maraschino cherries – drained & sliced in half
1 cup shredded coconut
2 cups mini marshmallows
8oz sour cream

Drain all of your fruits and put them in a large mixing bowl. Add your mini marshmallows, coconut, and sour cream. Stir to combine. Cover your ambrosia, and pop it in the fridge for at least 2 hours so the flavors have time to blend together and your marshmallows absorb some of the residual fruit juice. Stir again before serving.

Enjoy your ambrosia salad as a dessert or snack.

This is one of my favorite childhood recipes, and now my children enjoy it too.  We make it each year for Easter and for every picnic and BBQ we go to through out the summer.  With today’s weather being so nice, I decided we needed a little taste of spring tonight too.

    My family insist that I make Ambrosia at every picnic or gathering. A delightful refreshing dessert. We all love it.
