Strawberry Rhubarb Margarita

Time for a cocktail that it's a bit different from the every day. Strawberry Rhubarb Margaritas! A little sweet. A little tart. Frosty and creamy at the same time. Absolute perfection!

Between Cinco de Mayo and Taco Tuesday, I have been dreaming of frozen margaritas.  Strawberry Margaritas to be exact.  I don’t mean those syrupy sweet, unnaturally red concoctions you get at the local chain cantina.  Nope.  I’ve been dreaming of a naturally tart-sweet concoction from my own blender featuring real strawberries and good tequila, blended into a frosty cocktail.

After a rough Monday, and what feels like a very long Tuesday, I figured this afternoon would be the perfect time to have such a delicious cocktail.  I had a bag of strawberries in the freezer so that saved me from watering down my drink with ice.  Then I started thinking … rhubarb goes beautifully with strawberries, so why not make a Strawberry Rhubarb Margarita?!

Its as amazing as it sounds!  A little sweet.  A little tart.  Frosty and creamy at the same time.  Absolutely perfect in every way.

Strawberry Rhubarb Margarita

1/4 cup rhubarb, chopped
1 1/2 cups whole frozen strawberries
2 oz lime juice
1 1/2 oz silver tequila
1/2 oz orange liqueur
2 Tbsp raw honey

Time for a cocktail that it's a bit different from the every day. Strawberry Rhubarb Margaritas! A little sweet. A little tart. Frosty and creamy at the same time. Absolute perfection!

In a blender, combine the frozen strawberries, fresh rhubarb, tequila, orange liqueur, lime juice, and honey.  Blend on high for 1 minute, or until everything is combined and smooth.  Pour your margarita into your favorite cocktail glass, and enjoy!  Serves 1

Of course, if you are entertaining, you can scale this up and make a whole pitcher of strawberry rhubarb margaritas, but my husband’s idea of a cocktail is a glass of bourbon, neat, so I’ll stick to making mine by the individual glass.

Strawberry Rhubarb Margarita

Servings 1

Ingredients

  • 1/4 cup rhubarb chopped
  • 1 1/2 cups whole frozen strawberries
  • 2 oz lime juice
  • 1 1/2 oz silver tequila
  • 1/2 oz orange liqueur
  • 2 Tbsp raw honey

Instructions

  1. In a blender, combine the frozen strawberries, fresh rhubarb, tequila, orange liqueur, lime juice, and honey. Blend on high for 1 minute, or until everything is combined and smooth. Pour your margarita into your favorite cocktail glass, and enjoy!
