Back-to-School means back to our extremely busy schedules. We have scouts several nights a week, plus our homeschool PE class, school projects, field trips, and so much more is going on. Unlike the relaxing days of summer where I can start prepping dinner in the middle of the afternoon, once school starts dinner needs to come together fast and easy. One-dish meals are where it is at! They are a huge time saver, and they make cleanup a breeze since you only have one pan to clean up.

Now that my children are older, they are really starting to enjoy cooking and helping with the weekly meal preparations. Much to my delight, they even cook once a week! That’s right, my 8 and 9-year-old children cook us dinner, and my 4-year-old is the official taste tester.

While my kids want meals that are tasty, I want to make sure they include better-for-you ingredients, too. That’s why we switch out the ground beef in many recipes with Butterball® Ground Turkey. Yup, the same Butterball that we know and love for our Thanksgiving turkeys also gives us ground turkey for our quick weeknight meals. It’s so versatile for everything from tacos to skillet meals.

On our recent trip to Walmart for school supplies, we hit the grocery department to pick up all of the ingredients for dinner. I had been craving stuffed peppers, but my children don’t like the whole bell pepper cup, so we turned it into a skillet meal instead! I love that we can get everything we need at one store – it makes shopping and running errands so much easier!

Un-Stuffed Pepper Skillet

1 lb Butterball Fresh All Natural Ground Turkey 97/3
1 c chopped onion
1 c chopped green bell pepper
2 Tbsp vegetable oil
1 tsp garlic powder
½ tsp oregano
½ tsp parsley
½ tsp basil
14 oz can tomato sauce
14 oz can petite diced tomatoes
1 can instant brown rice (use the can from the tomato sauce to measure the rice)
½ can water
salt & pepper to taste
grated Parmesan cheese

In a large skillet, saute the onion and bell pepper until softened. Add in the Butterball Fresh All Natural Ground Turkey, and brown the turkey and crumble it with your spoon. Next, mix in all of your spices, salt & pepper. Toss to coat.

Bring this up to a simmer. Use one of the cans as your measuring cup for the instant brown rice. Add 1 can’s volume of rice to your skillet. Return your meal to a simmer, and simmer covered for 5 minutes. Then, turn off the heat and allow to sit for 5 minutes so the instant rice can finish absorbing all of those delicious flavors.

Top with grated parmesan cheese and serve! Makes 4-6 servings depending on the size of your appetites.

My daughter enjoyed cooking dinner for all of us. She took so much pride in making us a delicious meal, and her brothers gobbled it right up! They already asked to have this added to our regular menu plan, so that’s a win in my book.

    We frequently make stuffed peppers but my kids never eat the entire pepper. This would be a good solution! #client

      That’s exactly why we started doing this! I refuse to plate food and have them not eat it. With the little bits of pepper, even my picky eater devoured it!

    OMG, we make a recipe similar to this and it is so good. I love one pot meals during the week.
