The experts always say that we should be eating local, in season produce whenever it is available.  Its early January in eastern Pennsylvania, and for the most part, our local growing season is over, but this year, we have had some extremely warm temperatures, so I still have Brussels sprouts growing in my garden!  You can’t get much more local than your own backyard.  However, even if you don’t have Brussels sprouts growing in your yard right now, you can find perfectly fresh sprouts at your local grocery store or produce market.  Instead of boiling the Brussels sprouts until they are a unrecognizable mush like my grandparents did, I am elevating these hearty vegetable with this recipe for Oven Roasted Maple Bacon Brussels Sprouts.

Once you taste them, you will want to add Brussels sprouts as a side dish on a weekly, or more frequent, basis.  They are just that good!

Oven Roasted Maple-Bacon Brussels Sprouts

1 1/2 lbs of fresh Brussels sprouts – cleaned and halved
4 slices of bacon – diced
3 Tbsp oil (I use olive oil)
3-5 Tbsp of real Maple Syrup (pancake syrup won’t do)
salt & pepper

Preheat your oven to 450.

In a 9×13 baking dish, combine your bacon, oil, Brussels sprouts, salt and pepper.  Once the sprouts are coated with the oil, top them with 3-5 Tbsp of real maple syrup.  Put the entire baking dish in the oven, and roast the sprouts for 40 minutes, stirring twice during the cooking time.

Your Brussels sprouts should be fork tender, and slightly caramelized from the maple syrup.

If you already like Brussels sprouts, you are going to want to scale up this recipe!  I just made 3 pounds of these maple-bacon Brussels sprouts and with only four of us eating them, we devoured the entire pan!  Bacon really does make everything better, and maple syrup makes it even better still.

    hi, this is exactly the kind of recipe i was looking for. i just have one question – is the bacon precooked or does it cook in the sprouts?

      Everything is raw when it goes into the oven. The bacon will cook with the sprouts and crisp up beautifully.
