Bacon makes everything better, and that’s definitely true about this Bacon Wrapped Chicken.  Its a little sweet, a tad spicy, and your entire family will gobble it up!

Sweet & Spicy Bacon Wrapped Chicken

4 boneless, skinless chicken breasts
Bacon slices – 1/2 a slice per piece of chicken
salt and pepper to taste
garlic powder
chili powder
brown sugar

Preheat your oven to 400. Prepare your baking sheet (do not use a baking dish – it traps the steam, and your bacon will stay soft) by lining it with No-Stick Foil. This stuff is absolutely awesome, and will save you from having to soak & scrub your pan from the caramelized brown sugar.

Slice each chicken breast into thirds length wise, so you have long chicken fingers. If your chicken breasts are large, or you are feeding smaller appetites, you may want to slice them a bit smaller. Sometimes I can get 6 good sized chicken fingers from 1 chicken breast!

Season the chicken with the spices to your taste. We don’t like things very spicy, so we are very liberal with the garlic powder, but then scale back with the salt, pepper, and chili powder. If you really like spice, add a little cayenne to the mix. Make sure you season your entire chicken tender, and not just one side of it. You want the flavor to be everywhere!

Wrap a slice (half slice) of bacon around each piece of chicken. Then, you are going to dredge the entire thing in a coating of brown sugar. The combination of brown sugar, spices, and bacon will give you a candied bacon combined with barbecue sauce flavor on the finished dish.

Place your bacon wrapped chicken pieces on your baking sheet, making sure you don’t crowd them. Its better to use two baking sheets and have crisp bacon, then crowd the pieces and your bacon will only steam.

Once you have prepared all of your chicken pieces, place the baking sheets in the oven and bake at 400 for 30-40 minutes. The bacon and chicken will both be cooked through, and the brown sugar will have lightly candied each piece.

Serve bacon wrapped chicken with baked sweet potatoes and a green veggie for a delicious dinner that your family will ask for time and time again.
