Last week, we definitely got back in the groove. It felt good to have everyone healthy again and be back in my kitchen.

For the coming week, I pulled out the last two packages of chicken, the last two packages of steak, and 2 lbs of ground beef.

And that means next week we need to get creative because we are just about out of meat. I still have a turkey, a ham, a sirloin tip roast, 1 package of hot dogs, a few pounds of ground beef, and some soup meat (which I will probably grind and premake some burgers for the freezer). I’m used to having 15 cubic feet of freezer space filled, this feels empty.

I’m also working through my pantry staples of eggs, flour, and oats. I currently have three different breads proofing on the counter and plan to make some granola bars later today since we are completely out.

Over the past few days, I have also done a huge bulk-processing of turkey and beef to make homemade deli meat. I plan on slicing that all down on Wednesday, and I’ll share some details about it on Instagram then.

Upcoming Canning Projects

The citrus is still in the garage fridge, and last year’s tomato harvest is still in the freezer. I don’t have anything to do until Friday this week, so I am hoping to get to at least one of those projects.

Meal Plan for Monday 2/9 through Sunday 2/15

Breakfasts for the week: yogurt & granola, oatmeal “packets”, toast & jam, eggs

Lunches for the week: grilled cheese, peanut butter & jelly, tuna melts, chicken salad, ramen

Monday – Chicken & Rice Bake
Tuesday – Hamburgers on the Grill (finally a warmish day again)
Wednesday – Waffle Wednesday
Thursday – Steak & Salad
Friday – Dinner with Friends
Saturday – Homemade Pizza
Sunday – Roast Dinner (maybe I’ll defrost that turkey)
