Recap of Week 1 – Pantry Challenge
Good intentions and high hopes.
That is how last week started, but the universe quickly put me in check. We had several unexpected appointments come up during the week. Then there was the expected stuff- Auzre pickup & Scouts, Girl Scouts, and an Eagle Court of Honor. To say things were overwhelmingly busy would be an understatement.

Thankfully, we were able to stick to the menu plan throughout the week, with a few small adjustments. I pulled all of the proteins out to defrost on Monday. On the nights we were expecting to have them, each item was still frozen solid! I don’t know what’s going on with that fridge right now.
Thanks to Aldi, I stayed under my $50 budget for the week getting produce and cheese.
The Start of Week 2
With my $50 budget, I headed off to Tanner Brothers’ Dairy in Richboro for milk & produce earlier today. I am in need of a few days (or more) where I don’t leave the house. That means it is time to change up my routies and switch from Tuesdays to Thrusdays for running errands.
With 10 days between shopping trips, I am hoping four gallons of milk will last us. I also picked up strawberries, shallots, scallions, garlic, snow peas, cucumber, bell pepper, bananas, and American cheese.
After two week’s of the pantry challenge, I’m still on budget and things are slowly being used. I’d like to scale back the amount of fresh produce next week so we will use more of the frozen items we have on hand.
Recap of Last Week’s New Recipe
The new recipe for week 1 was going to be spelt waffles, but I decided to try a recipe that used fresh-milled soft white wheat instead. The waffles were a huge success! My husband and children loved them, and they asked that I make a bigger batch the next time.
Meal Plan for Monday 1/12 through Sunday 1/18
Breakfasts for the week: avocado toast, toast & jam, oatmeal “packets”, yogurt parfaits with homemade granola, eggs
Lunches for the week: nibble plates, quesadillas, chicken salad, egg salad, grilled cheese, PB&J, or Apple Butter sandwiches
Monday – Grilled Cheese & Soup from the Pantry
Tuesday – Homemade Chinese Carry Out
Wednesday – Grilled Chicken Sandwiches w/ Homemade Rolls
Thursday – Breakfast for Dinner
Friday – Homemade Pizza Night
Saturday – Cottage Pie
Sunday – Roast Turkey Dinner
I’m not sure what new recipes I will be trying yet, so the new plan is to share the recipes during my weekly recap.
