I’m back to meal planning my way through the pantry challenge. By planning ahead, I know what to pull out of the freezer each day, which makes it easier to plan meals around our other activities and schoolwork.

During the pantry challenge, I’ll be sharing my weekly menu plans & the new recipe I plan to try during the week.

Meal Plan for Monday 1/5 through Sunday 1/11

Breakfasts for the week: yogurt with granola, oatmeal with dried fruit & nuts, grapefruit, toast with jam, eggs

Lunches for the week: soup, ramen, leftovers, PB&J sandwiches, apple butter sandwiches, chicken salad, tuna melts, nibble plates

Monday – Leftovers
Tuesday – Beef & Cheese Enchiladas
Wednesday – Waffles & Sausage
Thursday – Burgers on the Grill (it’s going to be in the 50s!)
Friday – Homemade Pizza Night
Saturday – Out with Friends
Sunday – Roast Dinner – either a beef roast, ham, or turkey, depending on what I feel like later in the week

This Week’s New Recipe

I’m currently learning about fresh-milled grains and sourdough so most of my trial recipes lately have included those. This week, I’m planning to make fresh-milled waffles for dinner on Wednesday night. I’m also going to try a few different sourdough cracker recipes this week, and I’ll share a link to my favorites next week.
