Crunchy Asian Slaw

  • 1 bag of cole slaw mix
  • 2 packages of Oriental Flavor Ramen
  • 2 green onions
  • 1 cup sliced almonds
  • 1/3 cup sugar
  • 1/2 cup canola oil
  • 1/3 cup white vinegar

  1. In a large salad bowl, break apart the two packages of Oriental Flavor Ramen noodles. Reserve the seasoning packet for the dressing.
  2. Next, layer in the almonds, cole slaw mix, and top with green onions. I like to use my kitchen shears to slice up my green onions since it is much faster than using a knife, and this way my children can help.
  3. In a pint jar, put the sugar, oil, vinegar, and the contents of the 2 Oriental Flavor seasoning packets from the ramen. Close the jar, and shake vigorously so all of the ingredients are incorporated. Pour the dressing over the salad, cover and chill for at least 1 hour.
  4. When you are ready to serve, toss the Crunchy Asian Slaw to fully incorporate the dressing, noodles, and all of the ingredients.
  5. The noodles soften and untangle the longer they are in the dressing, and the veggies will soften as well. Even so, after a day when you are enjoying the leftovers, this salad is still crunchy and delicious.

Recipe Notes

If you want to dress up this salad to turn it into a meal, add a small can of mandarin orange segments that you have drained, and 2 cups of shredded chicken breast. Its absolutely delicious!
