The children did so well with last week’s menu plan, I’m letting them plan this week too! While the children gave me the main courses, I did coach them on expanding the menu some so that we would include fruits, vegetables, and a bit more variety. I think they were up for the task and did a great job.
Our garden is starting to be more productive, so there will be lots of vegetables during our meals. This week’s vegetables include zucchini, tomatoes, string beans from our garden, as well as eggplant and peppers that we traded for with a friend. I love having the veggies right in our garden and ready for the picking. From the garden to the table in fewer than 2 hours!
Weekly Meal Plan
Monday: Waffles & Bacon
Tuesday: Soft Tacos, Refried Beans, Spanish Rice
Wednesday: Chicken Cutlets, Fried Zucchini & Eggplant, Rice
Thursday: Meatballs & Egg Noodles – the children are looking through my Pinterest account for meatball ideas
Friday: Polynesian Chicken Kabobs, Rice
Saturday: BBQ Ham, Baked Beans, Cole Slaw
Sunday: leftover lottery
Beyond the Meal Plan
With so much zucchini on hand, I will be baking a few loaves of zucchini bread. I have several recipes for it that I’d like to try out and see what we think. I also am planning on shredding some for the freezer so I can make more zucchini bread later. We also have about 9 bananas in the fridge that over ripened while we were on vacation, so they will be turned into banana bread.
At the end of the week, I will be making a peach pie for our friend who cuts the children’s hair. She requested a peach pie as payment a few months ago, but since the peaches weren’t yet in season, we put it off until now. Since its just as easy to make 2 pies as it is to make one, I plan on making one for us too. I’m sure the kids will love it!
