The last month or so has not gone according to plan. Not any kind of plan. In fact, because of the craziness of life and family, we fell into the habit of planning meals the morning of, or in some cases a few hours before dinner time. While some days it was nice to not have to make a decision, I missed the structure of having a weekly meal plan in place.
This week, I am hoping to get back on track, at least a little bit.
My goal: to plan out 5 meals for the week, and have either leftovers/take-out or a last minute something from the freezer on the other two days.
In our family, breakfast and lunch are easy. We stick with the same few breakfasts: smoothies, cereal bars, oatmeal. Lunch is usually leftovers for my husband, and for now, PB&J or grilled cheese for the children and I.
Dinner on the other hand … well, that’s where the challenges lie. I strive to have family dinners every night, but with scouts, we sometimes have to eat dinner in two shifts to accommodate schedules. I don’t like it one bit, but the alternative is everyone eating dinner at 8p, and then going to bed right away.
Monday – Sautéed Chicken & Penne Alfredo
Tuesday – Cub Scout Night – Chicken & Rice Casserole
Wednesday – Girl Scout night – Pizza Night
Thursday – Korean Beef, Rice, Snow Peas
Friday – Leftover Lottery
Saturday – Chicken Noodle Soup & Loaded Potato Soup
Sunday – Breakfast for Dinner
