This week I am completely scattered. I can’t keep track of the day of the week. Its Tuesday, and I went through the entire day thinking it was Monday! Add to that a few field trips scheduled for this week, a canceled scout meeting, and still recovering from dental work and my husband taking a sick day, and things are all up in the air!
So this week, I am completely scatter-brained. I’ll admit to it. It happens to the best of us from time to time, and this week its all me.
So what is this Scatter-Brained mom serving up this week? Well lets see …
Monday – We woke up late for our field trip, and needed to get out the door. Since the children hadn’t eaten breakfast, and I didn’t want to be running even later, we had PB&J for brunch at 10:30a. Then while on our trip, we purchased soft pretzels and juice boxes for a snack (eek! $18 on a snack!) When we got home everyone snacked on various fruits that were in the fridge. I think the two year old had pickles for a snack, but I don’t really remember. Dinner was hot dogs on the grill, carrots, chips, and more fruit. A great day, but so disorganized.
Tuesday – I woke up feeling like I got hit by a bus. I’m guessing it was a combination of allergies and all of the walking I did yesterday. Breakfast was whatever the kids ate before I woke up. There were dirty dishes in the sink, so I’m pretty sure they ate something. Lunch was PB&J, apples, and milk. We used an Applebee’s gift card to get carry out for dinner since I still wasn’t feeling it. Everyone got to choose their own dinner, and I was pleasantly surprised by how well the kids ate. Dessert was fruit and a couple of cookies (we bought the Aldi version of Milanos. They are AMAZING!)
Ok, now for the meals I still have to cook this week. Well, prepare, I may not actually cook. This afternoon, the children and I did a quick trip to Aldi, so we are a lot more prepared for the remainder of the week than we were the beginning of it.
Wednesday-Sunday Meal Plan
Breakfast: Apple Cereal Bars, Egg Sandwiches, Cereal
Lunches: Grilled Cheese, Bagels & Cream Cheese, Muffin Tins
Grilled Steaks, baked potatoes, salad from the garden (yay!)
Kabobs, Rice, Salad
Foil Packet Dinners – trying out a few options for our upcoming camping trips
Cheeseburgers/Hamburgers, Asian Slaw, Pasta Salad, Chips, Birthday Cake (celebrating my mom’s birthday)
Leftover Lottery – Whatever is in the fridge is fair game
Beyond the Menu Plan
We have another field trip scheduled for this week, so I need to make sure we have snacks to take with us. My daughter and I are on a trail mix kick, but I can’t justify the high price of the varieties that we enjoy (almost $12 for a 10oz bag is crazy). I’m hoping to make a homemade batch, and see if we can save money by making it ourselves.
