This week we are cooking at home most nights. My husband has a few appointments later in the week, so my in-laws are babysitting the children, which may mean we get a date night. Right now, I’m just looking forward to some quality time in my kitchen each day and some family time around the table each night.
Menu Plan: April 9-15
Monday – Sauteed Chicken Breast, Mushroom Risotto, and Peas
Tuesday – Homemade Beef Enchiladas, Rice, Black Beans
Wednesday – Girl Scout Night – Leftovers or Grilled Cheese Sandwiches
Thursday – Breakfast for Dinner
Friday – Hamburgers, Fruit Salad
Saturday – Date Night or Ordering In
Sunday – Pork Roast, Roasted Root Vegetables, Salad
Other Cooking Projects
My daughter is on a raisin bread kick, so this week we want to try to make our own cinnamon raisin bread. I have a few recipes to check out, and we are hoping one of them does the trick.
I also have danish pastry dough that my mother in law made for me. I want to make a danish braid for breakfast one day this week, but I’m not quite sure of the flavor I want to use. I’m leaning towards a plain cheese danish since I already have all of the ingredients on hand.
For hamburgers, I will need to make hamburger buns as well. I have a recipe that makes 6 buns, and they come out perfect every time and they come together really quick if I start them in the bread machine. I also want to make a large batch of caramelized onions for on the burgers, and to keep on hand for sandwiches over the next week.
