We don’t usually make the same meal in back to back weeks, but these two were so delicious that the family is requesting them again already! I think I can handle making them again if they are going to clear their plates with no arguments.
My in laws are taking the children for the weekend, so I get off easy 1 night, and my husband and I will be using a gift card to go out to dinner. I am so thankful that they are able to spend time with our children and give Steve & I a break every once in a while.
With the rainy weather that is anticipated for the better part of this week, we will be cooking indoors more often than not, but I do hope to use the grill at least once.
Throw in a holiday (St Patrick’s Day) and some Easter prep, and its shaping up to be a very busy week in the kitchen.

Beyond The Menu Plan
With St Patrick’s Day this week, I’d like to teach my children how to make Irish Potatoes. We absolutely love them, but I haven’t made them in years. I actually have the cream cheese sitting on the counter getting soft as we speak.
I also have some Easter prep to do. We host a family Easter Brunch each year, and I need to confirm the head count, and do a trial run of a few of the recipes that I’m thinking about making. I also make almost all of our own Easter candy, so I need to get on that over the weekend while the children are away.
