This weather is absolutely screwy! Here I am ready to have the house open and be cooking dinners over an open fire, and now its cold and rainy and instead I’m thinking about soup, chili, and casseroles! It always amazes me how much the weather influences my food cravings, as well as my desire to cook in the first place. Right now, I have had the oven preheating for the last hour so I can do some baking, and instead, I’m just enjoying the extra warmth and a case of Monday afternoon laziness.
But alas, it is time to be productive and start thinking about making dinner for this evening, so without further ado, here is this week’s meal plan.
Meal Plan Monday: April 4-10
banana bread, oatmeal, smoothies
ravioli, grilled cheese, pb&j, muffin tin meals
- Soup & Sandwich Night x2
- Dr Pepper BBQ Chicken, oven roasted potatoes, salad
- BBQ Chicken Nachos
- Pork Scallopini in Calvados Cream Sauce, rice, veggies
Beyond the Meal Plan
I’m having another one of those weeks where I want to do a lot in the kitchen but I’m not entirely sure I’ll have the time. First up is baking banana bread so we have it for breakfast tomorrow. I’d also like to make a poundcake or some cookies so we have dessert food on hand for at least a couple of night. We’ll see what else I get inspired to bake as the week progresses.
