So last week’s meal plan didn’t go so well. We did have chicken noodle soup on Tuesday (the plan was chicken tortilla), and we did have pancakes one night. We ended up with two sandwich nights, and egg sandwiches; plus my husband and I fell back on a bad habit and fed the kids grilled cheese and then we ordered in. I’m hoping that this week goes a little better.
This week, we go back-to-school! David & Emily are starting with CCA on Wednesday, and this year I’m homeschooling my preschooler. I also have a Girl Scout parents’ meeting one evening, and a Cub Scout event another evening; and then this weekend is booked solid with scout events for both children. September is saying, “I’m back!” with a vengeance.
Meal Plan Sept 4 – Sept 10
Breakfasts: The cereal bars are gone! That means this week, we will be having oatmeal and smoothies for breakfast. I found several containers of frozen berries so they are the perfect base for the smoothies.
Lunches: We are well stocked on sandwich bread, peanut butter, and American cheese so you know what the basis of this week’s meals will be. We also have lots of apples and bananas, plus home canned pineapple and peaches.
Dinners: Dinners are going to be a challenge this week. Tonight my son made Korean Beef which was delish!
Tuesday – Grilled Sausage Sandwiches, Grilled Veggies
Wednesday – Homemade Hoagies
Thursday – Cub Scout Pack Picnic – we are bringing a veggie tray with homemade dip
Friday – Roast Chicken, Mashed Potatoes, Veggies
Saturday – family date night
Sunday – French Toast & Bacon
Tomorrow is going to be hot, but with the cooler temps the rest of the week, I’m hoping to stay motivated and keep up with kitchen tasks as well as cooking in general. I’m also hoping to add a kitchen day, or at least an afternoon, where I can do some baking.
