I am really enjoying meal planning! I took a long time off, and I don’t think that I realized them how much better I feel when I have structure in our meals and our day to day routines. Even though I don’t plan what we are going to eat each day, having a general plan of what meals I can prepare with what we have on hand has been a huge weight off my shoulders. We are eating out a lot less, most weeks not at all, and I feel better because I’m not fueling my body with crap food.
THIS WEEK’S MEAL PLAN: FEBRUARY 8-14
Eggs & Toast
Oatmeal with Applesauce or Dried Fruits & Nuts
Salads with leftover chicken or tuna
Peanut Butter & Jelly Sandwiches
Homemade Hummus with Pita & Carrots, Raisins, Nuts
Apples, Applesauce, Oranges
Cheese & Crackers
Beyond the meal plan:
My husband has been asking for homemade bread, and I have yet to make it, so this week, that needs to happen. I also have about 60lbs of apples that I purchased over the weekend to turn into applesauce and pie filling for canning, as well as an apple crisp and a Jewish Apple Cake.
This coming Saturday, I am hosting my first Soup Swap. I have 9 guests coming over, and we each need to prepare 6 quarts of soup for the swap. I am absolutely stumped as to what to make! I have a few favorites that I am considering, but I have yet to make a firm decision. I’m trying to decide on something that is freezer friendly so that my guests could pop the soup in their freezer to enjoy later instead of having it in the fridge and eating it right away.
