I searched out several freezer meal options over the last week. Friends told me about some books they love, so I figured I would start there and ordered a few books.
So once they arrive (should be tomorrow or Wednesday), I will begin reading and then planning a few of our own freezer meals. Until then, we are eating what we have on hand.
I rediscovered Trader Joe’s yesterday. That store is dangerous when you go without a shopping list because it all looks so good. I did purchase a few out of the ordinary (for us) items as treats or quick meals. It is nice to see that there are processed meals out there, that can help get dinner on the table, but are relatively low in calories, fat, and sodium. In fact, the meal with the most sodium, a frozen tempura chicken with sweet and sour sauce, has only 370 mg per serving with the sauce! Amazing compared to the meal from last week that was well over 1000 mg of sodium!
I look forward to trying out a few of the Trader Joe’s meals, and preparing dinner at home each and every night this week.
Weekly Meal Plan
Monday – grilled chicken breast, grilled potatoes, corn on the cob
Tuesday – steak on the grill, grilled veggies, baked potatoes
Wednesday – chicken cutlets (Trader Joe’s), mashed potatoes, veggies
Thursday – Outlaw Chicken Marinara (DreamDinners) and Spaghetti
Friday – Leftover Lottery
Saturday – Dr Pepper BBQ Chicken, rolls, cole slaw, oven fries
Sunday – Tempura Chicken with Sweet & Sour Sauce (Trader Joe’s), rice, stir fried snow peas
Beyond the Meal Plan
Over the weekend, I purchased a 50 lb bag of potatoes at Restaurant Depot for under $11. These potatoes are HUGE! So besides have potatoes as a side dish at least 3 times this week, I need to come up with some potato recipes for the freezer or for pressure canning.
