I am totally not feeling it today. We have had a very busy Easter weekend with the kids being away, then overnight guests, and then all of the family here for brunch yesterday, and more friends visiting today. Its been great, but I have no sense of a routine at all at the moment, and that includes planning for dinner. So I’m going to wing this week’s plan as I write this post, and we will see how it goes.
This Week’s Meal Plan
Breakfast will be the usual items – cereal, oatmeal, smoothies, muffins or some combination of those items. My children are starting to get breakfast on their own in the mornings, so I like having items on hand that they can grab themselves so I can get a little more sleep (when in reality, I should be awake before them – I’m working on it).
Lunches will also be the usual items – grilled cheese and PB&J are the staples of our lunch menu. We had English Muffin Pizzas this afternoon with friends, and we will be having egg salad at some point this week to use up the Easter eggs.
Dinner – who knows? Ok, that’s not a valid option is it? Let’s see … what do I have in the freezer and fridge to use up.
Tonight, we will have Easter leftovers so that’s easy. One night down.
The rest of the week …
- Steak & Baked Potatoes
- Spaghetti & Meat Sauce
- Pork Cutlets, Mashed Potatoes, and a Veg
- Chicken – not sure how I’m going to make that yet as I’m bored with the usual preparations
- Soup & Sandwich Night
Yeah, that meal plan doesn’t look half bad. Now to find the motivation to cook every night when I don’t really feel like it, well at least I don’t feel like it today, but having a meal plan makes it so much easier because the thinking comes out of the equation.
Beyond the Menu Plan
My mom requested strawberry jam over the weekend, so I would like to make a batch for her. I also would like to make a banana bread or two so I have them on hand for breakfasts. I don’t want to make any desserts, but rather use up the leftover desserts that are here from hosting brunch on Easter. Right now there are too many sweets in the house, and I didn’t think that was possible.
Healthy Eating Goal of the Week
Today, I am starting my new healthy routines to try and break some bad habits before summer arrives. This week, my healthy eating goal is to have breakfast every day. Its not something that I typically do, but I know I feel better when I eat something first thing in the morning.
