Last week’s meal plan had some highs and lows. We did really well eating at home Monday through Friday, however with the children away with their grandparents for the weekend, my husband and I went off plan and ordered takeout last night. While it seemed like a good idea at the time, I’m kicking myself for not sticking to the plan.
This coming week is going to be a bit unusual for us. For starters, the children aren’t home yet! They should be here by 5p, but I don’t know if my in laws are staying for dinner or what that plan is going to be. I’m planning on feeding all 7 of us, but we will see what happens when they get home.
We also have dentist appointments over 2 days – the children on one day and me on another. Depending on how we feel after those appointments will determine what we are having for meals. This week is also the return to full-time homeschooling. Today is the start of the new semester, so for the first time since mid-November both older children will have Language Arts, Math, Science, and Social Studies during the day not just one or two subjects followed by enrichment lessons.
On the plus side, I did just hit the grocery store this afternoon. While I was at Aldi this afternoon, I noticed they had a sign – $5 off all hams! The shank portion hams are already inexpensive at 89¢/lb, but once you take $5 off the total they were super cheap. I purchased three hams, and my most expensive one was still under $3 and it will feed my family for several days.
Now that I’m done grocery shopping, and the pantry and freezer are stocked, I can come up with our meal plan for the coming week.

- Steak, Baked Mac & Cheese, String Beans
- Chicken, Mushroom Risotto
- Ham, Potatoes, Corn, Carrots
Beyond the Meal Plan
I haven’t gotten to any of the recent canning projects like I was hoping, so all of the berries are still in the freezer. I am hoping to have a few hours in the kitchen to make jam one day this week, but with our schedule, I’m not sure that will happen.
I do however have some baking that I really want to do. I haven’t made homemade bread in a really long time, so I want to make a loaf of two during the day and have it with soup for lunches during the week. I also want to make some muffins to have on hand for breakfast or even snacks.
