Over the weekend, I visited Bringhurst Meats in Berlin, NJ and picked up our side of beef. I am so thankful that my husband and I have been saving up recently and we were able to make this large purchase to fill our freezer for the next year! We have so many wonderful cuts of beef, plus a lot of hamburgers and ground beef for quick and easy meals. While I was at Bringhurst, I also purchased a 40 lb case of bone-in chicken breast. I love working with a real butcher because they will cut and package everything just how you want it for your family. The only thing I didn’t purchase while I was at the butcher shop was pork, but that purchase will be coming up in May or June. There just isn’t enough room in the freezer right now!
As I work on this week’s meal plan, I am thankful for having a full freezer to make my job easier. I like knowing that I can provide healthy, balanced meals for our family with the food I have on hand. My goal for the upcoming week is to not have takeout at all. Not even once! I am so sick and tired of having meals that aren’t prepared at home. We have dramatically cut back our consumption of takeout meals, but still having any of it has been bothering me. I feel better when I eat real food. My family feels better when we eat real food!
I’ve consulted the weather for this week in writing up our meal plan. Mother Nature is still very confused about what the weather here should be. I’m hoping that the weather cooperates at least a few days so we can use the grill, and stay dry while doing it.
Meal Plan: April 11-17
- yogurt with fruit & granola
We always have a fruit or vegetable with our lunches. My 8 year old, could eat everything in sight so by filling him up with fruits & veggies, I know he won’t overindulge in treats and snacks later.
- Grilled Cheese
- Cheeseburger Mac
- Muffin Tin Meals
- Veggie Pizza Squares
- Steak Frite with salad
- Korean Beef Short Ribs, Rice, Veggie Stir Fry
- Citrus & Herb Roasted Chicken, Roasted Root Veggies
- Chicken Souvlaki with Pita, Feta, and Salad
- BBQ Ribs, Pasta Salad, Baked Beans
- Pasta & Sauce of some variety (I’ll figure it out during the week), Garlic Bread, and Salad
